Rhubarb Pie


 c. diced rhubarb

1 c. sugar

1 T. flour

Pinch of salt

2 eggs, beaten

  1. 1/2 c. heavy whipping cream

1 t. cinnamon

9” unbaked pie shell


Preheat oven to 350 degrees. Place rhubarb in pie shell. In a bowl, combine sugar, flour, and salt. Slowly mix in eggs and cream. Pour mixture over rhubarb. Sprinkle cinnamon on top. Bake for about an hour.
