Lemon Ginger Pork or Chicken


2 med onions, diced 

3 mushrooms, diced 

5 cloves garlic, diced 

small zucchini, diced 

1 T. fresh grated ginger 

2 c. chicken broth 

1/4 c. soy sauce

1/4- 1/2 c. lemon juice

fresh ground black pepper 

4 c. cubed pork or chicken

1 or 2 T. corn starch to thicken

1/2 pk oriental rice or bean noodles, cooked


Sauté meat in oil until cooked through, set aside. Sauté onion on low heat in a little butter or cooking oil until slightly brown. Add mushrooms, garlic, and zucchini and sauté for another minute. Add cooked meat, broth, ginger, lemon juice, soy sauce, and pepper. Bring to a boil. Combine corn starch with 1/4 c. water and slowly stir into sauce. Continue stirring until sauce has thickened. Remove from heat. Serve over noodles.

Pasta with Pan Seared Scallops & Bacon Cream Sauce

Cooked spaghetti noodles (amount?)
6 slices bacon, chopped 
1/2 T. butter
1 c. heavy cream
1/2 c. Parmesan, freshly grated 
1/2 t. olive oil
6 lg. scallops
salt & pepper

In a medium skillet, cook chopped bacon over medium-high heat until crisp. Remove bacon with slotted spoon and drain on paper towels. Add butter, cream, and Parmesan to bacon grease in skillet. Reduce sauce by half over medium heat. Season with salt and pepper to taste. Keep warm over low heat. 

In a separate skillet, heat the olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is really hot, add the scallops. Seat until golden brown (approximately 1 minute), then turn and sear on second side.Remove to paper towels to drain.

Serve bacon cream sauce with pasta. Place scallops on top and garnish with bacon.

Southwest Lasagna

1 lb. hamburger, browned & drained
2 T. chili powder
2 t. ground cumin
1 t. garlic powder

1 lb. shredded cheddar cheese
8 cooked lasagna noodles

24 oz. mild salsa
1 c. sour cream



Combine hamburger, salsa, and spices.



In a separate bowl, combine sour cream and 3/4 of the cheddar cheese. 



Place a small amount of meat sauce on the bottom of a 13X9 inch pan. Place four of the noodles on top of the sauce. Place half of the cheese mixture on top of the noodles, then half of the meat sauce. Repeat layers of noodles, cheese, and meat mix. Top with remaining cheddar cheese.



Bake at 350 degrees for 30 minutes. Let stand 15 minutes before serving.

Macaroni Ham Salad

7 oz. elbow macaroni
8 oz. pasteurized processed American cheese, cubed
8 oz. baked or boiled ham, cut into thin 2-inch long strips
13.5 oz. pineapple tidbits, drained
1/2 c. chopped sweet pickle
1 c. thinly sliced celery, cut on the diagonal
1 t. minced onion
1/3 c. pimiento
1/2 c. mayonaise

Cook noodles, rince in cold water, drain, and chill. Combine all ingredients.

Lasagne

1/2 lb. hamburger
1 c. onion, chopped
2 cloves garlic, minced
2 t. oregano
2 cans tomato soup (condensed)*
1/2 c. water
2 t. vinegar
2 1/2 c. cottage cheese
8 oz. grated cheddar cheese
4. oz. grated mozzarella cheese
1/2 lb. lasagne noodles, cooked

Brown hamburger and onion, drain grease. Add next five ingredients and simmer for 1/2 hour. Place in layers in a 13X9 inch pan:

1. noodles
2. cottage cheese
3. beef mix
4. cheddar cheese
5. repeat 1-4

On very top, sprinkle mozzarella cheese. Bake at 350 degrees for 30 minutes. Let stand 15 minutes before serving.

*can substitute spaghetti sauce

Mock Lasagna Noodle Bake

2 lb. ground beef, browned
30 oz. tomato sauce
1 T. diced dried onions
1 t. salt
1/2 t. freshly ground pepper
16 oz. egg noodles, cooked
1 c. sour cream
2 1/2 c. cottage cheese
2 c. grated cheddar cheese

Preheat oven to 350 degrees. Combine beef, sauce, onions, and seasonings. In a separate bowl, combine noodles, sour cream, and cottage cheese. Place half of noodle mixture in bottom of a 13X9 inch baking dish. Spread half of the sauce over it. Top with half of the cheese. Repeat layers. Bake uncovered for 20-25 minutes.

Ziti With Italian Sausage Sauce

6-8 servings

1 lb. Italian sausage
1 medium onion, chopped
1 small green bell pepper, chopped
1 clove garlic, minced
1 t. salt
¼ t. pepper
½ t. Italian seasonings
28 oz. diced tomatoes
16 oz. tomato paste
13.25 oz. package Ziti noodles
¼ c. Parmesan cheese
8 oz. shredded mozzarella

In large skillet brown sausage, onion, bell pepper and garlic. Drain excess fat. Add seasonings, tomatoes, tomato paste, and Parmesan. Prepare Ziti according to package directions. Drain. Place in 13 X 9 inch baking dish. Top with sauce and sprinkle with mozzarella cheese. Bake 20-30 minutes until heated through and cheese is melted.

String Pie

Serves 12-16
16 oz. spaghetti, cooked and cooled
2 medium onions, chopped
2 lb. ground beef
½ c. chopped green pepper
32 oz. spaghetti sauce
2/3 c. Parmesan
4 eggs, beaten
4 t. butter, melted
2 c. cottage cheese
1 c. mozzarella, shredded

Brown beef, onion, and green pepper in a large skillet; drain. Add sauce, mix well. Combine pasta, Parmesan, eggs, and butter in a large bowl. Place in bottom of two 13X9 inch baking pans. Spread cottage cheese over it and pour sauce mixture on top of that. Sprinkle mozzarella over top of casseroles. Bake for 20 minutes at 350 degrees.

Beef and Vegetable Supper

3 c. vegetable medley, thawed
1 lb. ground beef, browned
1 c. chicken broth
8 oz. tomato paste
12 oz. egg noodles, cooked

Combine first four ingredients and simmer for 30 minutes. Serve over egg noodles.

Beef Stroganoff

2 lb. ground beef
4 cloves garlic, minced
2 medium onions
16 oz. mushrooms, sliced
6 T. flour
2 t. beef boullion
4 t. Worchestershire sauce
4 T. ketchup
2 c. sour cream
2 cans cream of mushroom soup
4 T. red wine
egg noodles, cooked

Brown first four ingredients, drain grease. Add next four ingredients and cook until bubbly. Add last three and cook until heated. Serve over noodles.

Tuna Fettucine (United Nations Recipe- ITALY)

¼ c. margarine, melted
¼ c. flour
2 ¼ c. milk, hot
¾ c. Parmesan
½ t. pepper
½ t. salt
1/8 t. powdered garlic
7 oz. spaghetti, cooked
1 c. canned tuna, flaked
1/8 c. parsley, chopped

Combine margarine and flour, add milk. Stir until smooth and cook until thick. Blend in cheese and seasonings. Add spaghetti noodles. Toss lightly, heat thoroughly. Mix in tuna and parsley. Serve immediately. Garnish with canned or fresh mushrooms (cooked).

Cavatini

Makes 1 very large casserole

4 c. dry rotini noodles (or macaroni or wagon wheel pasta)
2 lbs. ground beef
1 onion, chopped
1 green pepper, chopped
1 (3 oz.) package sliced pepperoni
2 (4 oz.) cans mushrooms, drained
1 (4 lb.) jar Ragu spaghetti sauce
1 (12 oz.) package grated mozzarella cheese, divided

Cook noodles and drain. Set aside. Saute hamburger, onion, green pepper, and mushrooms until vegetables are tender. Drain. In a large bowl, mix all the ingredients, reserving 2/3 of the cheese. Pour into a 4 quart casserole dish or two 13 X 9 inch glass baking dishes. Sprinkle with remaining cheese. Bake at 350 degrees for 30-35 minutes.
