Canadian Bacon Poppyseed Buns


1/2 c. butter, softened

1/4 c. mustard 

2 T. minced onions

1 T. poppyseeds

12 potato rolls, sliced open

12 slices Canadian bacon

Mix first four ingredients. Spread on both sides of rolls. Place a slice of bacon on bottom half of each roll; replace tops. Wrap in foil and bake at 350 degrees for 30 minutes.

Crockpot Mojo Pork (or Chicken)


6-8 lb. pork roast (or chicken)

1½ c. chicken broth

1 c. orange juice

½ c. lemon juice

½ c. lime juice

2 onions, chopped

1 jalapeno, diced

1 head garlic, cloves separated & peeled

2 t. salt

2 t. oregano

1 t. pepper

1 t. cumin

1 t. smoked paprika

4 bay leaves


Place all ingredients in the crock pot and cook on low for 8-10 hours. Once the

pork (or chicken) is tender, shred it with two forks. Serve over rice.

Lemon Ginger Pork or Chicken


2 med onions, diced 

3 mushrooms, diced 

5 cloves garlic, diced 

small zucchini, diced 

1 T. fresh grated ginger 

2 c. chicken broth 

1/4 c. soy sauce

1/4- 1/2 c. lemon juice

fresh ground black pepper 

4 c. cubed pork or chicken

1 or 2 T. corn starch to thicken

1/2 pk oriental rice or bean noodles, cooked


Sauté meat in oil until cooked through, set aside. Sauté onion on low heat in a little butter or cooking oil until slightly brown. Add mushrooms, garlic, and zucchini and sauté for another minute. Add cooked meat, broth, ginger, lemon juice, soy sauce, and pepper. Bring to a boil. Combine corn starch with 1/4 c. water and slowly stir into sauce. Continue stirring until sauce has thickened. Remove from heat. Serve over noodles.

Pasta with Pan Seared Scallops & Bacon Cream Sauce

Cooked spaghetti noodles (amount?)
6 slices bacon, chopped 
1/2 T. butter
1 c. heavy cream
1/2 c. Parmesan, freshly grated 
1/2 t. olive oil
6 lg. scallops
salt & pepper

In a medium skillet, cook chopped bacon over medium-high heat until crisp. Remove bacon with slotted spoon and drain on paper towels. Add butter, cream, and Parmesan to bacon grease in skillet. Reduce sauce by half over medium heat. Season with salt and pepper to taste. Keep warm over low heat. 

In a separate skillet, heat the olive oil over medium-high heat. Season scallops with salt and pepper. Once the pan is really hot, add the scallops. Seat until golden brown (approximately 1 minute), then turn and sear on second side.Remove to paper towels to drain.

Serve bacon cream sauce with pasta. Place scallops on top and garnish with bacon.

Paprika Pork Rub (for roasts)

Seasoning:
½ c. garlic salt
¼ c. ground ginger
¼ c. pepper
¼ c. paprika
¼ c. onion powder

Combine ingredients and store in a sealed container in a cool dry place. 6 t. of seasoning is enough for a 4 to 4 ½ lb. roast.

To make paprika pork roast, rub seasoning over the entire roast. Place roast on a greased rack inside a roasting pan. Pour 1 cup of water onto bottom of pan. Bake, uncovered, at 350 degrees until meat is fully cooked.

Chop Suey {2 recipes}

Chop Suey
1 lb. lean pork, cut in bite sized pieces
1 lb. veal, cut in bite sized pieces
2 c. chopped onions
3 c. chopped celery
1 green pepper, chopped
1/2 c. molasses
1 can mushrooms
1 can bean sprouts
flour (to thicken)
3 T. chop suey sauce

Fry meat for 10 minutes. Fry onion and celery 10 minutes. Put all together and add water to nearly cover. Put in chopped green pepper. Simmer an hour, adding more water if necessary. Then add molasses, seasoning, mushrooms, and sprouts. Thicken with flour (No amount listed. Cornstarch would be more consistent with Chinese cooking. I'd say 1 or 2 tablespoons mixed with 1/4 to 1/3 cup cold water.); stir in chop suey sauce.

Chicken Chop Suey
meat of choice (you can use pork, veal, beef, or chicken)
1 c. celery, chopped
1/2 c. onion
1 can each of cream of mushroom soup and cream of chicken soup or 1 can chop suey vegetables
3/4 c. rice, uncooked
2 T. soy sauce
1 can water
1 t. salt
1/2 t. pepper

Brown meat, celery, and onion. Combine all ingredients and bake at 350 degrees for 1 1/2 hours.

Macaroni Ham Salad

7 oz. elbow macaroni
8 oz. pasteurized processed American cheese, cubed
8 oz. baked or boiled ham, cut into thin 2-inch long strips
13.5 oz. pineapple tidbits, drained
1/2 c. chopped sweet pickle
1 c. thinly sliced celery, cut on the diagonal
1 t. minced onion
1/3 c. pimiento
1/2 c. mayonaise

Cook noodles, rince in cold water, drain, and chill. Combine all ingredients.
